Salad Days, Part 2: Still Shrimpin'

 

 
It’s so encouraging to see shrimp in their natural habitat: on top of lettuce. Proud Larrys’ has a good shrimp salad, and so does Ajax Diner.
For Pop’s Shrimp Salad, Ajax drops some boiled shrimp amongst fresh greens, pepperoncini peppers, feta, and and cherry tomatoes, then tosses it all in housemade Creole mustard vinaigrette. It’s a refreshing and satisfying option if you can manage to overcome all the screaming voices in your head telling you to order meat and gravy at Ajax.
