Cooking with Kimme: Fresh ‘Chunky’ Salsa

Who doesn’t LOVE Chips & Salsa! A fantastic addition to any tailgate spread – watch the jalapeños depending on who your crowd is! This FRESH & homemade version will sure be appreciated by your Hotty Toddy guests!
 
Fresh ‘Chunky’ Salsa
(makes 1 quart)
 
1/2 cup green bell pepper, chopped
1/2 cup red bell pepper, chopped
2 cups grape tomatoes, quartered
1/2 cup red onion, chopped
4 garlic cloves (large), minced
1 fresh jalapeño, seeded and finely chopped
1/2 bunch cilantro
1 lime, juiced
S&P, to taste
 
Combine all ingredients in a bowl.
 
Store in airtight container, refrigerated for a minimum of 30 minutes, or until ready to serve.
